Cauliflower Fried Rice & Asian Orange Chicken

My husband’s favorite fast food is Panda Express. Yeah, what can ya do.

So you can imagine my dismay, but also my resolution to make something similar but healthy!
Well, I have tried many a recipe and nothing has come close…
So I took it upon myself to create my own recipe!
Did it turn out? Definitely. Does it taste just like Panda Express? Okay, no it doesn’t. I blame the MSG.
So when we ate it for dinner I told him it was Asian chicken so as not to give him false hope. But here’s the winner-he gave it’s a couple bites and then mentioned, “hey this tastes like orange chicken”! Panda Express? No. I asked him if he would eat it again and he assured me he would. He further mentioned how much he enjoyed it. So folks, this might be a recipe to at least stave off the panda express cravings!
1 green pepper
1 onion
3 mandarin oranges
Peeling (washed well!) of 1 orange
1.5 c chicken/vegetable broth
3 t nutritional yeast
2 T stevia (added at the end, if cooking)
2 t garlic powder
1/4 c braggs liq aminos
2 inch fresh ginger root
1 T coconut oil
1 t ACV
*(It turned out a little more runny than I wanted, so I added a tablespoon of chia seeds…)
BLEND! (To me this is always the answer…fast, and easy cleanup!)
~I then simmered my husbands share for about 20 minutes.
~I ate mine raw, over salad.
Of course I did try some of my husbands, which was just a little bit sweeter, from being cooked.
Cauliflower Fried Rice
1 cauliflower head
1 c peas
1/2 c corn
1/2 c diced carrots
1/2 c liq aminos
1/4 c sesame seeds
1 T garlic powder
*(optional: scrambled eggs)
-chop up cauliflower into smallish pieces, and then in little increments place into the blender to make a rice-like texture.
-then simply combine all ingredients into a mixing bowl and (if time permits) let marinate for at least a half hour.
NOTE: this makes quite a bit, so if you are not looking to eat quite a bit of rice and have some leftovers, you might want to half the ingredients.
~I didn’t heat mine, but I cooked the hubbies eggs and added in the ‘rice’ towards the end.
~I also cooked some organic free-range chicken in some sauce for him.
In all, this took me about 40 minutes from start to finish (with a baby on my hip, so you could probably shave off a few minutes)
Will I make it again?? A most definite yes!! It was delicious!
